Okay, this week I started to work out in the gym. Well, “work out” – is loudly said, it more looks like suffering, in a good way though. The more I work out – the bigger is my appetite. Mmm! And I am a picky eater. I also like something quick and easy, preferably fresh. Got to make today Italian flat-bread: piadina. Delicious and easy, it was so good that it was gone before we got to the photo camera to make any pictures (sorry!). Anyway, recipe is down below:
1 1/2 cups all-purpose flour
1/4 tsp baking soda
1/2 tsp salt
1/2 stick butter
1 olive oil
1/2 pack of mozzarella
5-7 stems of basil
20 pieces of packaged pepperoni
4 tbsp of pizza or pasta sauce (optional)
ground black pepper or some Italian seasoning, up to your taste
Okay, mix dry ingredients together: flour, baking soda, salt. Add melted butter and mix well. No need for mixer. After that, take a cup of cold water and slowly add it to the dough, while mixing it. Add as much as you need to get the dough bouncy enough and shape holding. Roll in a sausage shape and cut in 4 pieces. Place in a plastic bag and put in the fridge for 30 min.
Meanwhile cut tomatoes, basil and mozzarella. Once your dough is ready: roll out each piece and heat up the pan, sprinkle some olive oil and place you rolled out dough on it. As one side is done – flip it. Now on the cooked side you can put whatever you want. I did put a spoon of pizza sauce, 2 mozzarella pieces, 5 tomato pieces, 5 pepperoni pieces in top. Wait until the bottom cooks and then take the piadina off. Top it with seasoning and freshly chopped basil – ta da!
Repeat the same for remaining 3 piadinas or experiment with your culinary tastes! Bon appetite!
P.S: I will make some piadinas for breakfast tomorrow and will (try to) take pictures!
